Vitamin B2 (riboflavin) is a water-soluble vitamin that is not stored in the body. Daily intake is therefore necessary. Riboflavin belongs to the group of flavins, also called yellow pigments. This yellow pigmentation causes a bright yellow color of urine when excess ingested riboflavin is excreted.
Vitamin B2 has no toxic effects or side effects and thus no safe upper limit has been established. Riboflavin is also used in the food industry as a (yellow) dye. Its E number is E101.
Riboflavin is converted in the body in an enzymatic reaction to riboflavin-5-phosphate, the so-called "active form. This active form is also offered in supplement form.
Because Vitamin B2 interacts with other B vitamins, combination use with a vitamin B complex is recommended. Vitamin B2 is also necessary for the conversion of tryptophan into niacin.
What kind of food contains Vitamin B2
Vitamin B2 is found mainly in milk and milk products, eggs, liver, yeast and leafy vegetables such as spinach, lettuce, chard, kale and parsley. Mushrooms, legumes and almonds are also a good source.
Riboflavin is highly light-sensitive but, on the other hand, can withstand heat well. Thus, when cooked, it is well preserved.
