What is black garlic?

Black garlic is fresh white garlic that has been fermented under controlled conditions over an extended period of time (at least a month) causing the cloves to soften and blacken. This process affects the flavor, as black garlic tastes much softer and sweeter than fresh white.

Because of the fermentation process, black garlic is also richer in antioxidants than regular garlic, and it contains more S-allylcysteine, a sulfur-containing derivative of the amino acid cysteine. S-allylcysteine has broad biological activity.

Is black garlic healthy?

Glack garlic contains vitamins, minerals and antioxidants, and there are many known health benefits of eating garlic. Among other things, garlic supports the immune system and healthy heart and blood vessels. It also has a beneficial effect on cholesterol levels*.

However, not everyone can appreciate the pungent taste of raw garlic. Fermented garlic has a much milder taste. In addition, fermented foods have a beneficial effect on the digestive process.
